THAI GREEN CURRY
INGREDIENTS:
- 2 Chicken breasts, sliced into strips
 - 1 can coconut milk (regular or low-fat)
 - 1 Onion, chopped
 - 1 Aubergine (eggplant), chopped
 - 1 Green chilli, chopped
 - Thai Green Curry Paste
 
HOW TO MAKE :
-  Heat a large non-stick wok or frying pan over low heat. Add the Thai Green Curry Paste and cook for 5 minutes.
 -  Add the sliced chicken breasts and chopped onion to the pan. Cook for 5-8 minutes until the chicken  is no longer pink.
 -  Stir in the chopped aubergine and pour in the coconut milk. Simmer for about 10 minutes or until the chicken is fully cooked and tender.
 -  Scatter chopped green chilli over the curry and serve hot with rice.
